The Certificate II is designed to provide trainees with skills and knowledge to enable them to work under limited supervision as a production operator in a food processing factory. Certificate III is designed to provide trainees with the skills and knowledge to enable them to work as an advanced operator or team leader/leading hand in a food processing company. At Certificate III level trainees may not have direct responsibility for others, but are expected to provide a role model for others in the work area.

A record book setting out details of the performance criteria for each competency will be provided at the commencement of the program. Assessment will be conducted in accordance with these criteria both on-the-job and off-the-job as appropriate. The following is a list of common types of evidence used to assess competency; workplace performance, simulations, role-plays, questioning, visual presentation, work based assignment, skills folio & third party reports.
