NMIT is the premier provider of industry focused viticulture and winemaking Certificates, Diplomas and Degrees in Victoria, Australia.

Boasting world-class lecturers and facilities, including a fully operational 100-tonne winery and vineyards located at Ararat, the Yarra Valley, and Eden Park, as well as a training vineyard at the Growling Frog Golf Course at Yan Yean.

At last count NMIT had 40.5 hectares of vines spread across vineyards in Ararat (29), Eden Park (8), Yarra Glen (2) and Whittlesea (1.5)* – we harvested 107.6 tonnes of grapes last year.*

Our programs are designed and taught by industry experts to provide the knowledge you will need to work in many various roles in the wine industry, such as vineyard/winery manager, laboratory technician, wine retailer or wine exporter.

NMIT offers many pathways for students to further their studies. Many courses complement each other and allow students to gain deeper knowledge and higher qualifications.

Opportunities for complementary education in different sectors of NMIT’s Higher Education Primary Industries department, where students will complete the same core subjects and have opportunities for electives in different industries.

Introduction to Wine Grape Growing

This training program is offered online and offsite to students who wish to gain or further their experience in the practical elements of Wine Grape Growing. Completion of these nationally recognised units from the National Training Package will earn you credit towards obtaining the Certificate III in Food Processing (Wine).

Certificate II in Food Processing (Wine)

This program covers a wide range of topics that help students develop knowledge in theoretical and practical aspects of daily vineyard operations. NMIT offers this course in a variety of specialist streams through the Agriculture and Animal Science Department.

Certificate III in Food Processing (Wine)

This program comprises a wide range of topics that help students develop knowledge in theoretical and practical aspects of daily vineyard operations. Students train at the work enterprise site with additional online tutorial support. NMIT offers this course in a variety of specialist streams through the Agriculture and Animal Science Department.

Diploma of Production Horticulture

Majoring in viticulture, the Diploma of Production Horticulture is designed to provide students with the skills and knowledge to develop and manage a wine grape production enterprise. This course focuses strongly on the practical elements in vineyard management practices.

Associate Degree of Viticulture and Winemaking

Viticulture is the production of premium quality grapes and covers vineyard establishment and harvesting, involving the design construction and management of vineyards. Winemaking involves the processing of the grapes, bottling and the marketing of wine. This course provides you with extensive knowledge of vineyard design and management through to harvesting operations, along with how to process, bottle and market the wine that is produced.

Bachelor of Viticulture and Winemaking

This course provides you with extensive knowledge of vineyard design and management through to harvesting operations, along with how to process, bottle and market the wine that is produced. Develop hands-on expertise in premium grape-growing and winemaking, and learn about every aspect of the wine industry from the grape through to the glass.

Introduction to Winemaking

The Introduction to Winemaking short course gives students the opportunity to be guided through the basics of the winemaking process. Each student will make a small batch of wine during the course and learn how to manage a fermentation, rack and fine a finished wine. The course concludes with a bottling day. The completion of the nationally recognised units FDFCELFERA Perform Fermentation Operations (AGW107) and FDFOPTHS2A Clean and Sanitise Equipment (AGW105) will earn you credit towards obtaining the Certificate III in Food Processing (Wine).

Wine Appreciation

This short course will guide students through the process of evaluating wine. The course starts with an introduction to the basic tastes and students will have an opportunity to understand their own tasting strengths in relation to these basic tastes. The course then progresses to the evaluation of wine. Students will learn how to identify, describe and score different styles of wines using methods used by wine makers and wine show judges. Completion of this nationally recognised unit FDFCDSEWB Evaluate Wines (Standard) will earn you credits towards obtaining the Certificate III in Food Processing (Wine).

Wine Appreciation (Advanced)

This course starts by introducing students to techniques for evaluating wines and identifying the major wine faults. The course then commences a whirl-wind tour of the wine world, stopping at all major regions and varietals. Each session is an in depth look at the history and evolution of wines from each region and is centred on tastings of these wines. Completion of this nationally recognised unit FDFCDSEVAB Evaluate Wines (Advanced) will earn you credit towards obtaining the Certificate III in Food Processing (Wine).
